The crunchy peanuts on the coconut are called "cacahuates japoneses" or Japanese Peanuts. They weren't created in Japan, but a guy in Mexico decided to put soy sauce on the crunchy paste over these and they became a hit. This is one of my favorite snacks in the world and miss them terribly, as US versions are just awful. I'm glad you decided to take this trip, as Colima is a beautiful place.
